Crispy Fried Chicken Burger

with spicy sriracha mayo

This is everything you want in a fried chicken burger: crispy, smoky and spicy. This burger is perfect for a ‘fakeaway’ night in. The flavours are enough to make the Colonel Sanders himself drool.

Step #1:

Firstly, butterfly your chicken thighs by slicing through the middle of each one and open it up so it is flattened. Rub the paprika, salt, pepper, chilli flakes and oregano into each thigh ensuring that both sides are evenly coated.

Step #2:

Now it’s time to batter your chicken. Put the flour onto a large plate and the beaten eggs into a bowl. To add more flavour to your chicken, add extra paprika, salt, pepper and oregano to the flour and stir. Dip the chicken thigh into the flour and coat it evenly. Then dip it into the egg mix, again ensuring all of the chicken is coated. Repeat this process twice on each piece of chicken to make it extra crispy.

Step #3:

Meanwhile, place the rashers of bacon into a frying pan and fry for 5-10 minutes until dark and crispy. Set aside once done.

Step #4:

Pour your cooking oil into a frying pan so it comes up the 1 cm on the side of the pan. Let the oil heat up and then carefully place the chicken into the pan. Cook the chicken until golden brown and crispy on both sides and completely white when cut open, this will be roughly 5 minutes. Set aside once done and place a slice of burger cheese on top so the cheese starts to melt.

Step #5:

Time to make the spicy sriracha mayo! In a small bowl, stir in all of the ingredients. Next, toast the brioche bun. On the bottom bun, spread as much sriracha mayo as you like. Then add lettuce and tomato. Next add the chicken, bacon and any extra cheese. Place the top bun on top and press a skewer through the middle to keep all the goodness in!
