Ingredients
  • 2 Halibut Fillets (approx 150g per portion)
  • 1 King Edward Potato
For the Sauce
  • 150 g Finely Chopped Baby Leeks
  • 2 tbsps Dry White Wine
  • 100 ml Good Quality Fresh Chicken Stock
  • 2 tbsps Double Cream
  • Squeeze of Lemon Juice
  • Pinch of Fresh Thyme
  • 200 g Unsalted Butter
Pan Fried Halibut with a Roast Chicken Butter Sauce and Straw Fries

I love this dish! Halibut is probably my favourite fish and unlike an 80s wedding when you were given the option of chicken or fish this recipe teams up both with a rich Roast Chicken Butter Sauce and some super crispy straw fries.

  1. Peel your potato then finely slice lengthways on a mandolin on a very fine setting. Drop in to cold water to get rid if the starch.
  2. Add a tablespoon of olive oil to frying pan and add in your finely chipped leeks. Cook on a gentle heat for around 5 minutes until the leeks are tender.
  3. Add in the wine, chicken stock and cream and reduce by around half. Take your butter from the fridge and dice. Slowly add to the sauce whisking all the time until the sauce is thick and glossy. Finally finish the sauce with a squeeze of lemon and the thyme. Take off the heat while you cook the fish and fries.
  4. Pre heat your frier or pan to 180 degrees.
  5. Meanwhile season your fish on both sides with a little salt. Place presentation side down in a medium frying pan with a little olive oil. Cook the fish until you see in is cooked half way through. Carefully flip the fish and add a few knobs of butter. Baste the fish with the butter and cook for another couple of minutes. Take off the heat and allow to rest for a couple of minutes
  6. Pat your fries dry then carefully drop in to the hot oil. They will only take a coupe of minutes to cook. Take them out and let drain on some kitchen paper. Season with a little salt.
  7. Time to assemble. Place a little of the sauce in the bottom of your bowl and place the fish on top. Finally place some of your straw fries on top and serve.
