Gluten free Chocolate & Almond torta

This beautiful chocolate Torta is gluten free making it so light and airy! Its one of my favourite recipes so I'm sharing it with you!

Using some wonderful organic products from Organic wonders UK -

  1. Pre heat oven to 175.C
  2. Grease and line a 12” cake tin.
  3. Start by melting the chocolate and butter in the microwave in 30 second bursts until it’s melted and smooth.
  4. Separate the eggs making sure to avoid any egg yolks in the egg whites! 
  5. Add 3/4 of the sugar to the egg yolks and the remaining 1/4 of the sugar the egg whites. 
  6. Whisk the egg whites with the salt until soft peaks are formed, set aside.
  7. Whisk the yolks with the sugar until doubled in volume and have become light and pale. 
  8. Gently fold in the melted chocolate and butter to the egg yolk mixture until combined. Then gently fold the ground almonds and cocoa powder into the same mixture.
  9. Finally, fold in the egg whites. Do this in two batches, making sure not to knock any air out. 
  10. Pour into the prepared cake tin and bake for 40-50 mins until the cake is just set.
  11. Remove from the oven allow to cool and finish with a generous dusting of icing sugar. 
  12. Slice and enjoy with a dollop of whipped cream and cup of coffee!
