Ingredients
  • 5 mini tortillas
  • 1 small head of cauliflour
  • 2 eggs
  • 1 cup of panko breadcrumbs
  • salt
  • pepper
  • 100 g cheddar cheese
  • 40 g blue cheeses
  • ½ bottle of franks red hot
Blue cheese sauce
  • 150 g sour cream
  • 130 g mayonnaise
  • 160 g blue cheese
  • 1 garlic clove, minced
  • 1 tbsp lemon juice

Buffalo Cauliflower Quesadillas


  1. Cut the cauliflower into small florets, then dip in flour, egg and then the breadcrumbs - bake these for 25 minutes at 180℃
  2. Once these are done, toss in the franks red hot and set aside. Mix the blue cheese sauce ingredients together in a separate bowl
  3. Assemble your quesadilla with 20 g cheddar, cauliflower and some blue cheese. Toast this in a dry pan until the cheese has melted and the tortillas are brown on the outside.
  4. Serve with the blue cheese sauce and enjoy!
