Ingredients
  • 2 eggs
  • 2 bananas
  • 1 Cup sugar (I cut and used ¾ cup)
  • ½ Cup oil
  • 1 tsp vanilla
  • 1 Cup flour
  • 2 Cups quick oats
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 Cup frozen blueberries (mine were still a bit frozen)
  • ¾ Cup chocolate chips
Banana Blueberry Oatmeal Chocolate Chip Muffins

Method

  1. Blend the eggs, bananas, sugar, oil and vanilla on the high setting of your mixer.
  2. Add the flour, quick oats, baking soda, baking powder and salt and mix using a spatula by hand or using the lowest setting of your mixer.
  3. Add the frozen blueberries and chocolate chips and just mix until combined so the blueberries don’t make everything change colour.
  4. Scoop into muffin liners (silicone or paper) and bake in an oven preheated to 350℉ (375℉ if you're not using convect bake).  Keep an eye on the time.  I baked about 25-30 min but check to see if baked before removing from oven.
