  • 4 crumpets, sliced in half
  • 100 g chorizo
  • 120 g cheese (Cheddar/Red Leicester etc.)
  • 4 tbsps hot sauce
  • 2 eggs
  • 240 g cherry tomatoes
  • parsley and chilli for garnish

Chorizo Crumpet Toasties


  1. Pre-heat your oven to 180c and then place the tomatoes on a roasting tin and roast for abour 20-25 minutes until the skins start to blister. Once done, remove and season with salt and pepper.
  2. Fry your sliced chorizo in a little oil until crispy on both sides, remove from the pan.
  3. Add the bottom of the crumpet to the pan and then top with cheese, hot sauce and chorizo followed by a little more cheese then the top of the crumpet.
  4. After around 5 minutes on a medium heat, flip the crumpet and add something heavy like a cast iron pan on top to squash the crumpet down.
  5. After another 5 mintues, remove and serve with the tomatoes, egg and more hot sauce. Garnish with parsley and chilli
