Kimchi Slaw

This nutty, tangy, fresh, spicy and slightly sweet kimchi coleslaw is the perfect partner for Korean buttermilk fried chicken - or lovely by itself as a fresh, light lunch that’s great for your gut.

ingredients
  • 150 g Kimchi
  • 60 g Mayonnaise
  • 1 tbsp Rice wine vinegar
  • 1 tbsp Sesame oil
  • 1 tsp Gochujang
  • ½ tsp Salt
  • 400 g Shredded white cabbage
  • 200 g Shredded red cabbage
  • 5 Radishes, finely sliced
  • 5 Spring onions, finely sliced
  • 1 Large carrot, julienned
  • Black and white sesame seeds
  • Coriander leaves

Kimchi Slaw

This nutty, tangy, fresh, spicy and slightly sweet kimchi coleslaw is the perfect partner for Korean buttermilk fried chicken - or lovely by itself as a fresh, light lunch that’s great for your gut.

  1. Add the kimchi, mayonnaise, vinegar, sesame oil, gochujang and salt into your food professor. Blitz until smooth.
  2. Add the veggies to a large bowl and stir the blitzed kimchi mayo through.
  3. Garnish with coriander and sesame seeds.
  4. Enjoy - it’s that simple!
