  • 1 skate/ray wing
  • 1 medium red onion, finely sliced
  • 1 medium tomato, finely chopped
  • half a small bunch of coriander, chopped including the stems
  • 1 tsp small capers
  • 1 tbsp red wine vinegar
  • 3 tbsps extra virgin olive oil
  • knob of butter
Skate Wing with a Red Onion and Coriander Salsa
A simple but stunning fish dish!
Skate Wing with a Red Onion and Coriander Salsa Skate Wing with a Red Onion and Coriander Salsa

This is inspired by a Rick Stein recipe that caught my eye becuase the skate is poached, as opposed to coated in flour and pan fried, as is the norm in skate recipes. Less work and less mess! But, I've not compromised on the brown butter... that creeps in at the end, so you have the best of both worlds!

  1. Start with the skate wing in a pan of boiling water (about 1.5 litres) with a little salt. Reduce to a simmer and poach the fish for about ten minutes, until cooked through
  2. Whilst its cooking, make the salsa with all the other ingredients (except the butter) in a bowl together. Season well, mix together and set aside
  3. Finally, heat the butter in a pan with some sea salt over a moderate heat. Let it brown and get to a nice froth. Then immediately lift the skate out of the pan (with a fish slice), transfer to a serving platter, pour the brown butter all over and finish with the salsa spooned over the top
