EASY CHICKEN STIR-FRY WITH PASTA

CHICKEN STIR-FRY WITH SPAGHETTI

This was a very fun dish to try out considering I did not have noodles. Used whole wheat pasta, asian spices & sauces and loads and loads of vegetables. It is very quick & easy, packed with flavour and a good mid week meal. Honestly it was so good I had to share it.

Ingredients
  • ½ Packet whole wheat pasta, uncooked
  • 4 Boneless chicken thighs, diced (sub with Chicken breast)
  • 4 tbsps Sunflower Oil
  • ¼ Mixed peppers, julienned
  • 1 Medium Carrot, peeled & julienned
  • ½ cup Broccoli, chopped
  • 6-8 Button mushroom, sliced
  • ½ Courgette, halved & sliced
  • 1 Spring onion, roughly chopped
  • ½ Red onion, sliced
  • 2 Cloves of garlic, minced
  • 1 Red chilli, sliced
  • ¼ tsp Chinese 5 spice
  • ½ tsp Chicken spice
  • ½ tsp BBQ spice
  • 1½ tbsps Dark soy sauce
  • 1 tbsp Light soy sauce
  • 1 tbsp Oyster sauce
  • Salt & Pepper

Cook Spaghetti according to package directions;  drain & keep a bit of the water in a cup, but do not rinse the pasta. Meanwhile, season chicken spices with chicken, BBQ spice, salt & pepper.


In a large pan, heat about 1 tbsp oil over medium heat. Add chicken; fry for 3-5minutes or until browned on both sides. Remove from the pan & set aside.


In the same pan, add the rest of the oil; stir-fry onions until soft, then add garlic, chilli and fry for about 30seconds.


Add broccoli and sauté for a minute or so..Then add the mushroom, peppers, courgette and stir-fry for another  2-3 minutes. The add the pasta & chicken to  the veggies.


In a bowl  combine light soy, dark soy and oyster sauce  & some of that water from the pasta.


Pour the sauce over the stir-fry & toss/ stir until everything is mixed through & the pasta is coated in the sauce. Add the spring onion & chilli..Let it simmer for 2minutes or so.
