Ingredients
For the seasoning
  • 2 chicken breasts, or chicken thighs if preferred
  • 1 tbsp cornflour / cornstarch, for tenderising
  • 1 tsp Chinese five spice powder
  • 1 tsp ground white pepper
  • 1 tsp garlic powder
  • 1 tsp paprika powder
  • 1 tsp chilli flakes
  • ½ tsp salt
  • 1 tsp sugar
  • 2 tbsps light soy sauce
  • ½ tbsp Chinese cooking wine
  • 1 clove garlic, minced
  • 1 tbsp cooking oil
For the coating
  • 2 tbsps cornflour / cornstarch
  • 70 g tapioca or potato flour
  • 1 tsp baking powder
Seasoning powder for sprinkling
  • ½ tsp salt
  • ½ tsp chilli powder
  • ½ tsp garlic powder
  • ½ tsp black pepper
  • ½ tsp Chinese five spice

Taiwanese Fried Chicken

Air-fryer recipe!

A super easy recipe for Taiwanese fried chicken. Air-fried, but you can totally deep-fry or oven bake it. I used chicken breast here, but you can totally use chicken thigh for smaller juicier bites!


  1. Butterfly the chicken breasts to make it one bigger piece, or several smaller ones if preferred. Batter it and roll it for a bit with a rolling pin to tenderise the chicken.
  2. Combine all the seasoning together to make a loose paste and coat the chicken breasts. Marinate for 30 mins.
  3. Combine the flours and baking powder together and cover generously each chicken breast. Dust off any excess.


If air-frying:

  • Spray your airfryer basket with cooking oil, as well as brush each chicken breast on both sides with cooking oil.
  • Cook at 5 min interval, on 205ºC/400ºF, brushing over oil each time and turning over. Cooking for a total of 15 mins should be enough. If the chicken pieces are thicker or bigger they may need another 2-3 mins.
  • Once cooked, sprinkle over the additional seasoning powders, and allow to cook on a wire rack to crisp up.


If oven roasting:

  • Brush each piece of chicken with oil, and place over a wire rack to bake in the oven. Bake for around 30 mins in total at 220 depending on size, turning over halfway.


If deep-frying:

  • Heat up your oil to around 180ºC and fry the chicken until golden brown, and do not lower the oil heat halfway as this makes things more oily.
