Sausage Pasta Bake

The secret to this pasta bake is good quality sausages. Mixed with chorizo, veggies, pasta and cheese, satisfaction guaranteed.

  1. Cook your pasta according to the packet then place to one side.
  2. Fry the sausages in a drizzle of olive oil over medium-low heat till they are a lovely light golden colour, roughly 7 minutes. Once done remove from the pan and place to one side.
  3. In the same pan add the onions, courgettes and chorizo. Season with salt and pepper and cook over a low heat for 10 minutes.
  4. Once the 10 minutes are up transfer to a roasting dish and add the pasta, passata or tomato sauce, the sausages (at this point I like to cut them into bite-size pieces) and mix well. Add the olives and the ricotta and pop into a preheated oven set at 200℃ for 5-7 minutes.

Once out of the oven I like to drizzle with some extra virgin olive oil, a sprinkling of chilli flakes and serve with a side salad, a cold beer and a fresh baguette.
