Ingredients

4 Chicken Breasts Chopped

2 Garlic Cloves Minced

1 tbsp Ginger Minced

1 Onion Chopped

2 tbsps Curry Powder

400 ml Coconut Milk
-
250 ml Chicken Stock
-
100 g Peas
-
1 tbsp Cornflour(mixed with 2 tbsp water)

1 tbsp Coriander
-
1 tsp Cumin
-
1 tsp Paprika
-
1 tsp Curry Powder (for chicken)


Easy Chicken Curry
- Heat 1 tbsp olive oil in a large pan, add chicken and 1 tsp of curry powder, season well.
- Cook chicken until just cooked and remove.
- Add a tbsp olive oil, add onions and cook over low heat for 2-3 mins until softened but not coloured.
- Mix through garlic & ginger.
- Add spices and mix together.
- Pour in coconut milk and stock and mix.
- Cook for 10 mins on medium heat until sauce reduces and thickens.
- Stir through cornflour to thicken.
- Add peas & chicken, heat through.
- Stir through coriander and serve with basmati rice.
