  • 4 Chicken Breasts Chopped
  • 2 Garlic Cloves Minced
  • 1 tbsp Ginger Minced
  • 1 Onion Chopped
  • 2 tbsps Curry Powder
  • 400 ml Coconut Milk
  • 250 ml Chicken Stock
  • 100 g Peas
  • 1 tbsp Cornflour(mixed with 2 tbsp water)
  • 1 tbsp Coriander
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 1 tsp Curry Powder (for chicken)

Easy Chicken Curry


  • Heat 1 tbsp olive oil in a large pan, add chicken and 1 tsp of curry powder, season well.
  • Cook chicken until just cooked and remove.
  • Add a tbsp olive oil, add onions and cook over low heat for 2-3 mins until softened but not coloured.
  • Mix through garlic & ginger.
  • Add spices and mix together.
  • Pour in coconut milk and stock and mix.
  • Cook for 10 mins on medium heat until sauce reduces and thickens.
  • Stir through cornflour to thicken.
  • Add peas & chicken, heat through.
  • Stir through coriander and serve with basmati rice.
