  • half a pack of ready made puff pastry
  • 3 large red onions, peeled and halved horizontally
  • 200 g pack of perl las cheese (or other blue cheese of your chosing)
  • small bunch of fresh thyme, leaves removed, but keep a few sprigs whole

If you're a fan of blue cheese, this one's worth hunting down. A stunning artisan cheese made on a family farm in the west of Wales. Delicious, golden veiny cheese! The trick to this dish is to slow roast the onions, to really develop their rich flavour. This tart only has four ingredinets but it really packs a punch on flavour.

  1. Start with the onions in a roasting tray/dish with the fresh thyme leaves. Season and drizzle generously with olive oil. Roast in a moderate oven for a good 45 minutes to an hour, until the onions are nice and soft and slightly charred
  2. Whilst they're cooking, roll out your pastry on a floured surface and find something cirular to use to cut out your 'tart'. You want it to have about a 30cm diameter. Score a 1.5cm border around the edges and prick the centre with a sharp knife
  3. Finally, tear the cheese into chuncks and arrange on the base of the tart (except the border) and when the onions are done, arrange these on top. Pop in the oven for 15/20 minutes, until the pastry is cooked and the cheese has melted. Finish with the remainder of the fresh thyme on top
