Baked Feta

This makes a fab brunch served with bread and butter. Add a can of chickpeas to bulk it out if you want too.

Ingredients
  • 1 tbsp olive oil
  • 1 onion – sliced
  • 2 garlic cloves – sliced
  • 1 400g tin chopped tomatoes
  • 200 g roasted Red peppers (from a jar) – finely chopped
  • ½ tsp fennel seeds
  • 200 g feta cheese
  • 2 tbsps oregano
  • 1 tsp chilli flakes

1/ Fry the onion and the garlic in the oil for about 5 mins to soften. Add the onion, garlic, tomatoes, roasted pepper, fennel seeds and 1 tbsp of the oregano to an oven proof dish and mix.


2/ Place the feta on top in the middle and sprinkle the rest of the oregano and chill flakes on top. Put in a pre-heated oven at 200℃ s for 25 mins.
