Ingredients
  • 1 egg
  • ½ Cup brown sugar
  • ¼ Cup sugar
  • ½ room temperature butter
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp salt
  • 1½ Cups flour
  • 1 tsp vanilla
  • 1 Cup mini marshmallows (the more dried out, the better. Use your leftover ones. I didn’t have mini so I cut up the regular ones into eighths or smaller)
  • ¾ Cup chocolate chips or chunks (you can even break up Hershey’s bar for authentic experience)
  • ¾ Cup graham crackers, broken into small pieces but not crushed. You don’t want it too crumby

Enjoy the taste of ooey gooey s’mores even without the campfire.  These cookies require few ingredients and can be put together in no time.  Bring them to your next gathering to ensure smiles all around. They also freeze well, that is, if they make it to the freezer.

First cream egg, sugars and butter on high with an electric mixer. Add in your vanilla.


Next add all of the dry ingredients and combine on the lowest setting until it’s just mixed.  Do not over mix.


Add in approximately two thirds of the chocolate, marshmallows and graham crackers, saving enough to top them with at the end.  Mix it until it just combines. Combine the remaining ingredients in a bowl and save it for later.


Refrigerate for ½ hour. Preheat your oven to 350℉ and line a baking sheet with parchment paper.  Scoop about 1 ½   tablespoons of the batter and roll it into a ball.  Bake for 9 minutes.  Remove and top each cookie with the graham, chocolate and marshmallow mix.  You may need to press in a bit to ensure they stay in place.  Bake for another 3 minutes.  Remove from the oven and let cool.  Place on a cooling rack.  Keep refrigerated after cooling. Enjoy.
