Ingredients

2 tins of spicy mixed beans

2 small peppers

1 medium onion
-
1 tsp chopped garlic

2 tbsps brown sugar

2 tbsps bbq sauce

1 tbsp red wine vinegar

1½ tbsps tracklements sweet mustard
-
½ green or red chilli
Spices
-
1 tbsp smoked paprika
-
1 tsp cumin
-
1 tsp coriander
-
1 tsp salt
-
½ tsp pepper


Spicy Barbeque Beans
- Finely dice the onions and peppers and soften in a little oil for about 5-10 minutes. Once this is done add the garlic and chilli and stir this out.
- Cook for a further 5 minutes carefully not letting the veg burn
- Add in the spices and stir this for about 2-3 minutes before adding in the vinegar
- Add in the mustard and stir then add in the beans and mix through.
- Cook on a medium heat for about 2-3 minutes before adding in the sugar and bbq sauce
- Pour into an ovenproof dish and cover, bake at 150-180 for about 20 minutes, then remove the lid, stir and bake for a further 15 minutes.
- When its done it may look a bit dry so add a bit of water and mix.
- Taste and season then serve with Jacket potato or rice
