Ingredients

1 Tin of chopped/plum tomatoes

1 clove garlic
-
¼ Red chilli
-
1 can of water
-
1 veggie stock cube
-
1 tsp dried basil
-
1 tbsp fresh basil
-
⅓ cup of uncooked rice

¼ onion


Creamy Vegan Tomato Soup
- Finely dice the onion and soften in a pan with a little oil. Once they start to get translucent, add in the garlic and chilli.
- Cook this out for another 5 minutes and season, then add in the chopped tomatoes, the water and stock cube.
- Simmer this for about 5-10 minutes then add in the dried basil and rice. Cook until the rice is soft (pas al dente stage!)
- Thin out with a little more water if required but blitz using a hand blender. Taste and adjust seasoning.
- Serve up with croutons, chilli oil and some fresh chilli
