  • 1 Tin of chopped/plum tomatoes
  • 1 clove garlic
  • ¼ Red chilli
  • 1 can of water
  • 1 veggie stock cube
  • 1 tsp dried basil
  • 1 tbsp fresh basil
  • cup of uncooked rice
  • ¼ onion

Creamy Vegan Tomato Soup


  1. Finely dice the onion and soften in a pan with a little oil. Once they start to get translucent, add in the garlic and chilli.
  2. Cook this out for another 5 minutes and season, then add in the chopped tomatoes, the water and stock cube.
  3. Simmer this for about 5-10 minutes then add in the dried basil and rice. Cook until the rice is soft (pas al dente stage!)
  4. Thin out with a little more water if required but blitz using a hand blender. Taste and adjust seasoning.
  5. Serve up with croutons, chilli oil and some fresh chilli
