Ingredients
  • 150 g fresh or frozen broad beans, cooked and shelled
  • half a large cucumber, halved and then sliced
  • 3 large radishes
  • 1 nectarine, quartered and then sliced
  • 6 slices of lomo 'ham'
  • 1 lime, cut into wedges
  • some fresh basil/thyme
For the dressing
  • 4 limes, juiced
  • 1 tbsp extra virgin olive oil
  • 1 tsp Dijon mustard
  • 2 tsps good quality runny honey

A lovely seasonal summer salad to coax out the sun!

It's that time of year... broad bean season and fresh nectarines in full swing, coming together in this lovely little salad with Spanish dry cured Lomo (pork tenderloin). Finished with a dressing made with fresh lime juice and pine and fir tree raw honey. Sublime... !

  1. Start by making your dressing with all the ingredients together in a small bowl. Whisk well to incorporate everything and set aside
  2. Then prep all your salad ingredients
  3. Finally compile your salad with the cucumber and beans as a base and then the nectarines, radish and ham on top. Season and finish with the lime wedges, fresh herbs and a grating of lime zest. Serve with the dressing on the side
