Mediterranean Baked Orzo

This is lovely as a main on it's own or as a side for meat or fish. It's nice finished with either crumbled feta, chopped olives or some capers.

Ingredients
  • 250 g Orzo
  • 300 g Cherry tomatoes
  • 1 red pepper
  • 350 ml Chicken stock
  • 1 tbsp Dried oregano
  • 4 Sprigs of rosemary
  • 1 Onion
  • 2 Cloves garlic
  • 100 g Baby spinach
  • 2 tbsps Olive oil
  • Freshly ground lack pepper (to taste)

1/ Preheat the oven to 180℃  Deseed the pepper and cut it into thick slices. Slice the onion. Finely slice the garlic. Roughly chop the spinach leaves.


2/ Put all the ingredients except the spinach and olive oil in a shallow casserole or oven proof skillet. Drizzle the olive oil over the top and mix to all together. Put in the oven for 35 mins.


3/ Remove from the oven and mix through the spinach leaves.
