  • 500 g Fresh Spinach

  • 30 g Parmesan (grated)

Chicken, Spinach & Mushroom One Pot
With a creamy, Parmesan sauce

A beauty of a one-pot recipe that produces super tender Chicken in a luxurious, creamy sauce.

Prep 30 minutes
Total 15 minutes
  • In a large pan with a lid, fry off the Onion & Garlic over a medium heat until softened.
  • Add in the Chicken & seal on all sides then add the Mushrooms & cook for a couple of minutes until softened.
  • Pop in the stock, put the lid on the pan & simmer for around 5 minutes.
  • Add half the Spinach to the pan, pop the lid on and cook for a few minutes (until wilted) then repeat with the other half.
  • Add the Cream, Parmesan & a good amount of cracked Black Pepper & cook for a few more minutes until the Chicken is cooked through & the sauce has thickened slightly.
  • Serve with creamy Mashed Potatoes & seasonal vegetables.
