Ingredients
  • 1¼ cup flour (I used gluten free) ⁣
  • ½ cup blanched almonds (finely grounded) ⁣
  • 1 tsp baking soda ⁣
  • 1 tsp baking powder ⁣
  • 1 tsp vanilla essence ⁣
  • 1 tbsp thick Greek yoghurt (if you don’t have this just use a little more apple cider and oat milk) ⁣
  • 2 eggs (I used organic ones) ⁣
  • ½ cup oat milk⁣
  • 1 tsp apple cider ⁣vinegar
  • 2 tsps muscovado sugar ⁣
  • squeeze lemon juice ⁣
  • ½ tbsp olive oil ⁣
  • Topping: Large handful blueberries and strawberries (sliced) ⁣
Fruit topping
  • ½ cup blueberries
  • handful strawberries (sliced in half)

1. Preheat the oven to 180℃ Lightly grease a sheet pan (either a 1/4 sheet - 7×11 or 1/3 sheet – 9×13) ⁣

2. Combine the dry in ingredients in a big bowl and set aside. In a separate bowl combine the wet ingredients (everything minus the fruit) ⁣

3. Combine everything together ⁣

4. Place the batter into the sheet pan and lay the fruit over the top, leave a little space in between each piece ⁣

4. Bake for around 20-25 minutes. I started with it on the middle shelf for 10 minutes using just the bottom heat of the oven. And another 10-15 minutes with the heat set for the whole oven, until cooked through ⁣
