  • 2 tsps apple cider ⁣vinegar
  • 2 tsps muscovado sugar ⁣
  • Squeeze lemon juice ⁣
  • 1 tbsp olive oil ⁣
  • Topping: Large handful blueberries and strawberries (sliced) ⁣
Fruit topping
  • ½ cup blueberries
  • Handful strawberries (sliced in half)

  1. Preheat the oven to 180℃ Lightly grease or line a sheet pan (either a 1/4 sheet - 7×11 or 1/3 sheet – 9×13)
  2. Start by prepping the chia seed and water mixture in a small bowl, mix well. Leave to one side to soak for 10-15 minutes.
  3. Combine the wet ingredients in a big bowl then stir in all the wet ingredients (except the fruit) ⁣
  4. Place the batter into the sheet pan and lay the fruit over the top, leave a little space in between each piece ⁣
  5. Bake for around 20-25 minutes. I started with it on the middle shelf for 10 minutes using just the bottom heat of the oven. And another 10-15 minutes with the heat set for the whole oven, until cooked through ⁣
