  • 2 Sandwich Thins
  • 1 egg beaten
  • 10 ml of semi skimmed milk
  • 23 g grated mozzarella / parmesan
  • Salt and pepper
  • ½ tin of tuna in brine (drained)
  • Sweetcorn
  • Chopped and diced of quarter of a red pepper
  • 1 tsp of fat free greek yoghurt
  • Fresh chives

  1. Turn oven on to heat up to 180℃ fan assisted.
  2. Prepare a baking tray with greaseproof paper
  3. Make up your filling.  I used tuna, sweetcorn, red pepper and bind it with the yoghurt, chives and seasoning to taste and most of the cheese, you want a little left to scatter on the top.
  4. Mix the egg, milk, salt and pepper. Cut the top halves of the sandwich thins into triangles and soak both top and bottom halves in the egg wash for at least 5 mins so its soaked up all of the egg.
  5. Place the bottom uncut half of the thin on to the prepared baking tray. Spoon on the filling avoiding getting it too close to the edge. Match each triangle of the top half to the edge of the bottom half pressing down with a fork to seal the two pieces together. Cook for 25 minutes until it is nice and crispy on the bottom and top.
  6. They can be eaten hot or cold and can be frozen too for up to 3 months.
