Ingredients
Pancakes
  • 225 g Self raising flour
  • 1 Large egg
  • 250 ml Buttermilk
  • 1 tsp Baking powder
  • 25 g Caster sugar
Berry topping
  • 250 g Mixed frozen berries
  • 2 Heaped tablespoon Caster sugar
  • 1 tsp Cornflour

Fluffy Buttermilk Pancakes with Berries

Buttermilk pancakes are one of my FAVOURITE breakfast treats. I love them topped with all sorts, but my favourite topping would either be berries or bacon and syrup. These are super easy to make and will make you think twice before you head out to the supermarket to get them again!


  1. For the pancakes, add all of your ingredients to a large mixing bowl and whisk together until you have a smooth batter - make sure you have no flour lumps! 
  2. Set your pancake mixture to one side. 
  3. For the berry topping, add your frozen berries and sugar into a non stick pan and add around a tablespoon of water. Slowly start to heat up and mix until the sugar is dissolved. 
  4. Keep the berry mixture on a low heat stirring occasionally.
  5. Returning to the pancakes, get a large non stick frying pan and add a little oil - I use a spray oil and you really don’t need much if it is a good pan. Add a ladle of mixture to the hot frying pan and cook until you can see big bubbles. Flip and cook the other side. Repeat until all the mixture is used. 
  6. If your berry mixture is quite thin, add your cornflour and stir. This should thicken it up. 
  7. Serve your pancakes how I have here topped with your berry mix (I used blueberries and cherries), fresh sliced banana and raspberries, a sprinkle of icing sugar and a dash of golden syrup. Enjoy!
