The Pasta
  • 500 g Spaghetti
  • Salt
The Sauce
  • 2 tbsps Olive Oil
  • 1 Garlic Clove
  • 1 tsp Chili Flakes
  • 3 tbsps Butter
  • 85 g Parmesan
  • 3 tbsps Mascarpone
  • 1 Lemon (Zest & Juice)
  • 200 ml Pasta Water
  • Black Pepper
  • 2 tbsps Flat Leaf Parsley
The Garnish
  • Parmesan

Lemon & Mascarpone Pasta


  • Fill a medium pot with water and place on high heat, once boiling season heavily with salt and add pasta
  • Put a large pan onto medium heat, add olive oil
  • Add garlic and cook for 1-2 mins
  • Add black pepper and chili flakes, cook for 30 seconds
  • Add butter until melted/bubbling, add pasta water and reduce slightly 1-2 mins (save some extra pasta water and set aside)
  • Add lemon zest and juice
  • Strain pasta and add to sauce
  • Add parmesan and mascarpone, mix thoroughly on low heat (add more pasta water if needed)
  • Taste and season with sea salt if needed
  • Mix in parsley
  • Garnish with fresh grated parmesan
  • Enjoy!
