  • 4 corn on the cobs
  • 60 ml mayonnaise
  • 60 ml sour cream
  • 1 tsp chilli powder
  • 1½ limes

Elote - Mexican Street Corn


  1. Grill your corn until charred under a hot grill or bbq. You can bake this for 40 minutes at 180 also.
  2. Once done, rub the lime over the corn
  3. Mix the sour cream and mayo together and then spread this over the corn
  4. Sprinkle with chilli powder and then pour the grated cheese over the top
  5. Garnish with coriander, more lime and chilli powder
