Ingredients
The Bread
  • 4 Sliced Pan Slices or Sourdough
  • Butter (Softened)
The Onions
  • 1 Onion (Sliced)
  • 1 tbsp Olive Oil
  • 1 tbsp Butter
  • 20 ml White Wine
  • Fresh Thyme
  • Sea Salt & Pepper
The Filling
  • 4 tbsps Red Cheddar (Grated or Sliced)
  • 4 tbsps White Cheddar (Grated or Sliced)
  • 4 tbsps Gruyere (Grated or Sliced)
  • 4 tbsps Mozzarella (Grated or Sliced)

French Onion Grilled Cheese


  • Heat a medium frying pan to medium heat, add olive oil
  • Add sliced onions, cook for 2-3 mins, add butter and salt & pepper, cook on medium heat for 5-7 mins
  • Add thyme and white wine, reduce until very little moisture remains
  • Add softened butter to one side of each piece of bread
  • Add cheeses to one of the non buttered sides of bread
  • Add onions on top of the cheese and place the other slice on top butter side up.
  • Heat 1 tbsp olive oil in a frying pan, place sandwich onto pan, lower heat and cook for 3-5 mins per side, cover with another pan if cheese isn't melting in the middle.
  • Cheese should be fully melted and the outside perfect dark golden brown
  • Slice in half
  • Enjoy!
