Ingredients
  • 1 tbsp olive oil
  • 70 g leek, roughly chopped
  • 150 g onion, roughly chopped
  • 70 g cashew nuts, roasted (unslated)
  • 200 g asparagus, roughly chopped
  • 250 g potato, peeled and cut into bite-size chunks
  • 830 ml water
  • 40 g garlic, roughly chopped
  • 2 tsps salt
  • 1 tsp white pepper
  • black sesame seeds, for garnishing
  • a bunch of #IMAGINATION

Method

  1. Add the oil, leeks, and onions in a large pot and sauté for 5 minutes.
  2. Add the remaining ingredients, bring to the boil, turn down to a simmer and cook for 20 minutes or until the potatoes are soft.
  3. Allow to rest for 5 minutes.
  4. Transfer to a blender and blend until smooth.
  5. Taste and season if needed.
  6. Pour into bowls, garnish with black sesame seeds and serve immediately.
