Ingredients
  • 1 Cup oats
  • 2 eggs
  • 1 banana
  • 1 tsp baking powder
  • ¼ Cup applesauce
  • 1 apple (I peeled it and added it to my blender. You can use 2 pieces of fruit instead. Pears, peaches, mangoes all work well.)
  • Handful of chocolate chips (optional)
Flourless Baked oats

Tastes like muffins or a cake but so much healthier.  I use no refined sugar (except for chocolate chips). You can totally leave them out and use dried fruit instead. These make about 12 muffin sized cups and are quite filling as they don’t rise as much as a regular muffin.  Did I mention it all comes together in your blender in about 20 seconds? I know you want to save it! Tag me in your creations.  I can’t wait to see.

Place all ingredients in your blender and blend on high.  Add chocolate chips or dried fruit or raisins and mix by hand.  Pour into your silicone moulds or a greased muffin tin.  Bake in a preheated oven at 375F for 30-35 min.  Enjoy warm or refrigerate and warm up when needed for a filling breakfast.
