Ingredients
Chilli Chicken
  • 750 g Boneless chicken thigh, cut in to chunks
  • ½ Green pepper, cubed
  • ½ Red pepper, cubed
  • 1 Red onion, cubed
Chicken marinade
  • ½ White onion
  • 5 Garlic cloves
  • ½ tbsp Ginger paste
  • 1½ tbsps Soy Sauce
  • 6 tbsps Corn flour
  • 2 Spring onions, finely chopped
Sauce
  • 5 Red birdseye or thai red chillies, finely chopped
  • 1½ tbsps Dark soy sauce
  • 1 tbsp Light soy sauce
  • 1½ tbsps Sriracha
  • 1 tbsp Honey
  • 1 tbsp Rice vinegar
  • 1 tbsp Oyster Sauce
  • 1 tbsp Corn starch
  • 3 tbsps Water
  • 4 Garlic cloves, minced
  • 2 inch Ginger, peeled and grated
Hakka Noodles
  • 200 g Medium egg (or eggless) noodles
  • 2 tbsps Sesame oil
  • 4 Cloves of garlic, finely chopped
  • 1 Red onion
  • 2 small carrots, peeled and grated
  • 75 g White cabbage, shredded
  • 2 tbsps Soy sauce
  • 2 tbsps Garlic chilli sauce
  • 1 tsp Rice wine vinegar
  • ½ Green pepper, sliced thinly
  • ½ Red pepper, sliced thinly
  • 2cm ginger, peeled and grated
  • 5 Green chillies, sliced lengthways
  • 1 tsp White pepper
