Ingredients
  • 500 g Chicken wings
  • 150 g Dark brown sugar
  • 1 tbsp Soy sauce
  • 2 tbsps Gochujang (Korean chilli paste)
  • 50 g Cornflour
  • 4 Garlic cloves, crushed
  • 1 inch piece of Ginger
  • Sesame oil
  • Spring onion
  • Sesame seeds

  1. Firstly prepare the sauce. Place the dark brown sugar, soy sauce, sesame oil, gochujang, garlic and half of the ginger into a saucepan and cook on a medium heat
  2. Keep stirring until it’s bubbling and sticky, then take it off the heat and set aside
  3. Split the chicken wings down the middle. Use your finger to find the knuckle and cut in between.
  4. Coat the chicken wings in the cornflour and half the ginger
  5. Heat a few cm of oil in a pan, and when its hot fry the chicken wings until they are golden and crisp. This should take 7-8 minutes.
  6. Put the fried chicken wings onto kitchen paper to soak up any excess oil
  7. Then coat the chicken wings in the sticky sauce
  8. Serve immediately garnished with sliced spring onion and toasted sesame seeds

As a youngster, I hit rock bottom and landed myself in a young offenders. I managed to turn my life around, became the first person to earn a Gold D of E Award behind bars and through this found my passion in cooking. I was taken on by Jamie Oliver, eventually started my own business and now find myself catering for royals and celebs. I use my love for food to spread joy and help others find purpose and change their lives. I mentor youngsters who have been in trouble with the law and regularly go back into prisons to share my experiences. I find myself being in a very fortunate position where I am able to do something I really love AND get paid for it!
