Who doesn't look a good brownie right!?

This simple recipe will give you delicious brownies every single time

Prep 50 minutes
Total 1 hour
  1. Preheat the oven to 180℃ and line 20cm baking tin with greaseproof paper.
  2. Grab b a saucepan, fill it with 7.5 cm of water and place over a medium/low heat. Bring to a light simmer.
  3. In a glass mixing bowl, add the butter and break the dark chocolate into pieces into the bowl, place over the pan of simmering water (making sure the bowl doesn't touch the water) and begin to slowly melt the mixture. Stirring often to mix. Once all melted and completely mixed, take the mixing bowl off the heat and leave to cool.
  4. In another mixing bowl, add the flour and cocoa through a fine sieve to get rid of any lumps.
  5. Grab a large mixing bowl (I know, lots of mixing bowl's), add the eggs and sugar then grab a electric mixer and on the highest setting whisk the mixture for 4-5mins until completely combined, it should look pale and doubled in size.
  6. Now pour in the cooled chocolate mix into the egg and sugar mixture and gently with a spatula mix it through trying not to beat it as we want to keep as much air in the mixture as possible.
  7. Once you've folded the mixture through, add the flour mixture to the bowl and again gently fold through until you see no flour and you have a chocolate looking batter, this will take a couple of minutes. Add the chocolate and white chocolate chunks and stir through one final time.
  8. Now pour the mixture into the baking tin, moving the mixture into all corners of the tin. Place in the middle of the oven and cook for 30mins. If after 30mins you open the oven and check the tin and the middle is still wobbly then place it back in for 5mins more. Remember it will set once it begins to cool down.
  9. Once baked, take out the oven and leave to cool for 15mins preferably on a wire wrack. Dust with icing sugar (optional), once cooled, dig in and enjoy.
