Ingredients
  • 4 pieces of haddock
  • 1 pack of turkey chorizo or half pork chorizo
  • 1 tin of chickpeas
  • 2 large sweet potato (500g)
  • 2 tsps cumin
  • 2 tsps curry powder
  • 2 tsps paprika
  • 2 tsps turmeric
  • 1 tsp garlic granules
  • 2 onions (red or white)
  • 4 tomatoes (into quarters)
  • 1 leek
  • 1 green pepper sliced
  • 2 carrots cut into pieces

  1. Preheat the oven to 200℃, mix the spices with oil, you may need more oil.
  2. Chop up the veggies and add to the ovenproof dish, add the spice (leave ¼ for the fish) and place into the oven for 25 minutes and stir halfway through. 
  3. Add the chorizo and stir the mixture, place the rest of the spice mix onto the fish and add on top of the vegetables, place into the oven for 15 minutes or when the haddock is cooked through. 
  4. Enjoy!
