Dressing
  • ½ Cup hearts of palm, sliced
  • 1 lemon, juiced
  • 1½ tbsps extra-virgin olive oil
  • 2 garlic cloves, minced
  • 1 tbsp fresh dill, minced
  • 2 tbsps fresh parsley, minced
  • 1 tsp salt & ground pepper
Salad
  • 1 bundle of asparagus
  • ¼ Pint cherry tomatoes, halved
  • ½ red or yellow pepper, sliced
  • ½ carrot, peeled and diced
  • 1 avocado, sliced in strips
Asparagus  Summer Salad

Asparagus Summer Salad

If you're feeling like something fresh and getting your greens in, this asparagus summer salad will do just the trick.

Here's all you have to do to whip up this salad in 20 minutes!


  1. Snap the bottom of the asparagus (last 2 inches) and then boil asparagus for 10 minutes.
  2. While boiling, chop your carrots, hearts of palm, red pepper, tomatoes, avocado, and fresh herbs.
  3. Remove asparagus and shock in a bowl of ice and water (ice bath) for 5 minutes
  4. Start on your dressing in a small bowl; add your lemon juice, minced garlic, extra-virgin olive oil, salt, pepper, and fresh herbs.
  5. Remove asparagus from the ice bath and gently pat dry (you want the dressing to take to it).
  6. Slice asparagus in half, or bite-size pieces and add to large salad bowl. Add your sliced veggies and dressing. Mix well and serve!
  7. *If you want to let the flavour set in, place it in the fridge until you're ready to serve!
